4th of July Recipe- Spangled Sandwich Pops

Spangled Sandwich Pops  




Hands-on Time: 10 minutes
Total Time: 10 minutes
Serves: 1 per sandwich

  • Mini ice-cream sandwiches
  • Sprinkles or nonpareils
  • Colorful cupcake liners
  1. First, skewer mini ice-cream sandwiches on popsicle sticks.
  2. Then, press the exposed filling into a plate of sprinkles or nonpareils.
  3. To keep mess to a minimum, serve the pops in colorful cupcake liners.

Try a different kind of entertainment and enjoy a laser show set to the tunes of Pink Floyd, the Beatles, Bob Marley, the Dave Matthews Band or an All Request show, where the audience chooses the play list. Take a class, learn about the formation of our solar system, galaxies, black holes and even extra-terrestrials. Classes, observation sessions, and laser shows take place on Friday evenings, Saturdays and select Tuesdays. The Observatory is open for telescope viewing on most Friday evenings, depending on weather.

Meet the team at Lofts On The Hill

Edel Caldwell is the Sales & Marketing Associate at Lofts On The Hill  Aparments in Boulder, Colorado.  Edel has been apart of the Lofts On The Hill  team since June 2011.

Where are you from originally (where did you grow up)?
I grew up in Ireland and I have lived in great places such as the Cayman Islands, The Florida Keys, Denver, CO, Chicago IL and New York City before settling back into the rocky mountain life.

What is your favorite thing about living in Colorado?
Weather – the four seasons and of course 300 days of sunshine.

What do you love to do in your spare time?
You will find me on one of the many Colorado trails with my husband and two dogs.  If not there I will be exploring the hot springs and small towns.

What are you passionate about?
Life and humanity
What is the best thing about working at Lofts On The Hill?
The people and culture of the company.  There is a team of smart passionate people here with great energy.
If you could transport yourself anywhere in the world and vacation there for a week where would you go and why?
Ireland – great culture, great people and of course my family
